With Thunderbird, I find it easiest to use "Toggle Word Wrap" extension:

With it, you just choose in the menu if the mail content should be 
wrapped or not.


Also, if anyone is using KDE4, its "konsole" adds spaces at the end of 
the line (if you are used to copy text from the console and paste it to 
your mail client, you will find it's hard to do so with "konsole" from 
KDE4 - all lines may have some extra spaces added at the end of the line):
