[debian-non-standard] information regarding /var/log

Hello,
Am I right that /var/log on the usb stick should be updated during boot from 
usb? So if /var/log/messages and /var/log/dmesg and so on are not changed it 
was not booted from usb stick?
I'm just trying to debug why booting debian on my Freecom FSG-3 does not work. 
Files on the stick are not altered here after connecting stick, power-up FSG 
and wait ~30min. Any clue what the problem could be?
